Answer: spec.postRenderers with Kustomize patches applied to the rendered manifests
Explanation
Post-renderers run on the manifests Helm rendered, before they're applied, so you can patch fields the chart doesn't expose. A patch on the HelmRelease object itself only changes its spec, not the resources the chart creates.
